Marinated Skirt Steak Carne Asada Tacos

Nothing beats tacos hot off the grill—especially when they're made with our Folsom Farm Beef Outside Skirt Steak. It's flavorful, tender, and perfect for quick, high-heat grilling. This citrusy marinade brings out bold carne asada flavor, and the char delivers that signature street taco bite. Great for Cinco de Mayo or any night of the week.


Marinade Ingredients (for 2–3 lbs of steak)

  • ½ cup fresh-squeezed lime juice
  • ½ cup fresh-squeezed orange juice
  • 3 cloves chopped garlic
  • 3 green onion sprigs, thinly sliced


Taco Ingredients

  • 2–3 lbs Folsom Farm Beef Outside Skirt Steak (or flank, flap, sirloin)
  • Salt and pepper
  • Flour or corn tortillas
  • Your favorite taco toppings (e.g. sautéed onions, guacamole, minced white onion, cilantro)



Instructions

1. Marinate the Steak

  • Combine marinade ingredients in a zip-top bag.
  • Add steak and refrigerate for at least 2 hours (up to 24).

2. Preheat Grill

  • Remove steak from marinade and pat dry.
  • Season both sides with salt and pepper.
  • Heat grill to 500°F or higher.

3. Grill the Steak

  • Grill 2 minutes per side, then check internal temp.
  • Cook 1 minute per side more, if needed, until steak reaches 140–145°F.
  • Total cook time: 5–6 minutes for medium to medium-rare.

4. Rest and Slice

  • Rest steak for 5 minutes.
  • Slice thinly against the grain for the most tender bite.

5. Build Your Tacos

  • Serve in warm tortillas with your favorite toppings.
  • We recommend guacamole, sautéed onions, minced white onion, and chopped cilantro.
