
Steak & Snow Pea Stir Fry

A quick, filling, and family-friendly meal that’s perfect for weeknights or feeding a crowd. Stir fries are a great way to stretch a pound of beef, use leftover veggies, and still serve up something satisfying. We love using Folsom Farm Beef for its clean, pasture-raised nutrition—rich in bioavailable nutrients and unbeatable flavor.
This version features tender beef and crisp snow peas in a savory, slightly sweet sauce. Feel free to swap in your favorite vegetables!
Ingredients
- 1 lb quality beef (sirloin, flank, skirt, flat iron, or tenderloin)
- 1 tbsp fresh chopped ginger
- 1 tbsp fresh chopped garlic
- 1 cup snow peas
- ½ chopped onion
- ¼ cup soy sauce
- ⅓ cup oyster sauce
- ¼ cup hoisin sauce
- 2 tbsp olive oil or beef tallow
- 1 tbsp cornstarch mixed with 1 cup warm water (slurry)
- Salt & pepper
- Optional veggies: carrots, zucchini, broccoli, bell peppers
Instructions
1. Prep the Rice
2. Prep the Beef
- Pat dry and thinly slice beef against the grain.
- Tip: If partially frozen, it's easier to slice thin.
- Remove any silver skin or hard fat.
- Season lightly with salt and pepper.
- Mix in chopped garlic and ginger.
3. Prep the Veggies & Sauce
- Slice onions and any optional veggies.
- Set snow peas aside for later.
- Mix soy, oyster, and hoisin sauces in a small bowl.
4. Sear the Beef
- Heat 2 tbsp oil or tallow in a large skillet on high.
- Once hot and lightly smoking, sear beef in small batches.
- Do not overcrowd—give each piece contact with the pan.
- Remove and set aside once browned.
5. Stir Fry the Veggies
- Add beef back to the pan.
- Add onions and optional veggies.
- Cook until onions are translucent.
6. Add Sauce & Slurry
- Pour in sauce and stir to coat evenly.
- Stir in the cornstarch slurry and mix well.
- Let the mixture come to a boil, then reduce to medium heat.
- Simmer until the sauce thickens to your liking.
7. Finish with Snow Peas
- Add snow peas during the last minute of cooking.
- Stir just until heated through but still crisp.
8. Adjust & Serve
- Taste and adjust seasoning.
- Too salty? Add 1 tbsp brown sugar.
- Not salty enough? Add a dash of soy or oyster sauce.
- Serve immediately over warm rice.
- Optional: Serve with potstickers or egg rolls and Thai chili sauce.
